What inspired you to write your book?
As a small child I grew up watching my Mother cooking and baking for our family, and I was always intrigued by the delicious smells of home-cooking and with what she made. One of my earliest memories is of standing on a kitchen chair, next to my Mother, and ‘helping’ her to bake a cake. I’m sure that I was no help to her, but I surely loved the experience!
As I grew older, I was aware that my Mother and Grandmother could turn their hands to many cooking skills and I was always intrigued to watch a meal being prepared and cooked.
In my twenties, I spent many years working in commercial kitchens and running restaurants, always staying close to my love of cooking and creating simple, yet delicious meal.
So, now a woman in my forties, I have truly enjoyed everything about putting together my first cookbook (Tried & Tested – 101 Recipes). It is a collection of my favourite recipes that I have cooked many times over the years for my boyfriend, family and friends.
My recipes really work, to provide exactly the results they promise with minimal kitchen equipment, preparation time and ingredients. They really are as simple as that. All of these recipes are ‘no fail’, if you follow the simple instructions I have set out. I’ve personally tried, tested, modified and cooked every single recipe until I have made it the very best that I possibly can, without compromising on flavour.

Sample Recipe or Food Advice
Garlic and Mustard Grilled Prawns
Ingredients (Serves 4)
1 kg large uncooked tiger prawns, frozen but fully defrosted
125ml olive oil
3 tbsp lemon juice
1 onion, very finely chopped
3 garlic cloves, crushed
25g fresh parsley, finely chopped
1 tsp mustard powder
1 tsp salt
Method
Combine the olive oil, lemon juice, onion, garlic, parsley, mustard powder and salt in a bowl and mix thoroughly. Add the prawns and turn to coat well with the mixture. Cover the bowl with cling film and refrigerate for 5-6 hours.
Soak long bamboo skewers in cold water for 30 minutes (the skewers must be thoroughly wet or they can catch fire!). Take the prawns and thread them evenly onto the wet skewers. Reserve the marinade.
Grill the prawns under a preheated grill at a medium heat, basting once with the reserved marinade, and turning once until they change colour and are evenly cooked.

How do you see writing a food/cookbook as different from writing other genres of books?
I have wanted to write a cookbook for a while, but never really had the time.
For me, cooking is all about inspiring people and tempting them with wonderful tastes, colours and textures.
It is completely different from writing a novel, as each recipe has a happy ending! Seriously, if I could inspire just one person to enjoy cooking, or giving that person a new food experience, then I will be happy.
Advice to someone that is thinking about or currently working on a food book or cookbook
Go for it!
I have loved everything about writing my cookery book. The only advice I could offer, is to stick to what inspires you and stay true to yourself.
How did you decide how to publish your book and where is it published through:
I published my book through Amazon. Uploading it was a straightforward procedure and there are helpful forums. With my next book, I might not stay exclusive to Amazon with their KDP Select option, but see where else I can upload it, too.
