Why Bake Gluten Free?

Gluten is the protein compounds found in wheat, barley, rye and other such grains. Those who suffer from celiac disease have a condition where the small intestine cannot tolerate gluten and the gluten starts to injure the lining of the small intestine. Having Celiac disease is one of the main reasons for a Gluten Free diet although it has become more popular in recent years for the perceived health benefits of following this type of diet.

Oats On a Gluten Free Diet

Oats have been a questionable item for Celiacs and the gluten intolerant since the creation of the Celiac disease diet. Oats themselves, as a grain, do not contain the gluten protein.
