Lee Zalben liked this delight so much that he opened up shop in the heart of Greenwich Village, Manhattan and devoted his undying love toward an all-things-peanut butter restaurant. In 1998, Lee’s admiration for the nutty treat became a reality with “Peanut Butter & Co.,” and gourmet sandwiches have never been regarded as dull ever since.
