But, if you accept the fact that the quality and complexity of wine can be dependent on soil, climate, and topgraphy then you must love AVA’s. In a nutshell AVA’s dictate the importance of terroir. I’ve let my choices percolate around in my head for a while and have changed my mind about who deserves to be on my Top 5 Beans / Roasting Companies list. This came about for a couple of reasons. Mostly I am getting old and my senses are just aren’t what they used to. I know what you are thinking. REALLY, that’s why? No, not really, like all classics, I keep improving with age. Just ask my wife. Just kidding, in all seriousness, tastes do change as we age, I know mine have.
